I make a lot of homemade treats at Christmas. From nuts to soup. Really, soup. I make it in batches, freeze in portions and fill my mother’s freezer.
Candy is another big favorite, but it can be tricky. Especially when you’re in a rush and it’s late at night and you don’t write down the recipe correctly. You end up with squishy fudge.
No worries… scoop it into balls and dip in chocolate. Heavenly truffles to die for. Yeah, I can make mistakes, but I can roll with it.
4 cups Chocolate Chips (2 bags)
(to make squishy fudge for truffles, use 3 cups chips)
14 oz. can sweetened condensed milk
1/4 cup butter
dash of salt
1 teaspoon vanilla
Combine all ingredients except vanilla. Microwave 2 minutes, stir well. Microwave again at 30 second intervals, stirring each time until completely melted. Stir in vanilla. Pour into foil-lined 8x8” pan. Cool completely, cut into squares.
For truffles: after cooling, scoop into balls and roll with hands. Melt dipping chocolate. Place rolled centers in freezer for 5-10 minutes prior to dipping. (I like to work with batches at a time, so they don’t thaw while dipping). Dip into melted chocolate, place on parchment paper to cool.
